Xmas scones - brandy scones with mincemeat and marzipan. A festive interpretation on a classic farewell tea supply.It's Jon's birthday in December and he commonly likes to change a festive afternoon tea to celebrate. When I ask him what he wants to eat he e'er lists the tralatitious farewell tea treats (scones, sandwiches and permissive cakes) but then wants Christmastime goodies specified as change pies and stollen too.  We either end up with a array inarticulate with food, or he doesn't get everything he's asked for, which rightful isn't tract on his date.

To represent these scones all christmassy, I replaced many of the concentrate with brandy and mixed in many mincemeat and balls of marzipan. The marzipan melts during cookery and goes a bit gooey - really tasteful if you eat them friendly from the oven. Ingredients

  • ½ tsp baking powder
  • ¼ tsp salt
  • 250 g self-raising flour + a little extra for dusting

  • 50 ml brandy
  • 100 g mincemeat
  • 50 g marzipan
  • 85 ml full-fat milk + extra for brushing on top of your scones


Instructions

  1. Pre-heat the oven to 220ºC/200ºC fan.
  2. Softly oil a baking paper with butter (or alternatively, I use a bake-o-glide wrapper and greasing isn't essential).
  3. Put the self-raising flour (250g) into a giant vessel. Cut the butter (50g) into cubes and add it to the flour.
  4. Gently rub the butter into the flour until it is the consistence of breadcrumbs.
  5. Cut the candy (50g) into flyspeck cubes.
  6. Add the shaker sweeten (30g), hot makeup (½ tsp), flavouring (¼ tsp), marzipan, mincemeat (100g) to the flour and butter. Create it a quick stir to ensure that all of the ingredients are evenly shared.
