Eggplant Stew

  1. 3 unit Big Eggplants, Quartered
  2. 4 undivided Small Zucchinis, Cut In Big Chunks
  3. 2 unit Peppers, Quartered
  4. 2 total Onions, Ropey Sliced
  5. 1 intact Big Herb, Wide Sliced
  6. 1 can (most 16 Oz. Situation) Shredded Tomatoes
  7. Olive Oil, As Required
  8. Salt And Flavourer
  9. ¼ cups Parsley Or Cilantro, Shredded
